Looks good to me.
You've opted for a triple channel RAM kit there - if you want triple channel, you'll need to go with socket 1366 - the original i7's - if you're happy with the mobo/cpu you've chosen, drop down to a 4GB dual channel kit, or even two of them for 8GB - other than that - looks pretty good to me too...

Holy good golly gosh! Look at that quick launch bar! lol
Quick Launch: Because that's 2 seconds you could be spending elsewhere!
People are stupid; given proper motivation, almost anyone will believe almost anything. Because people are stupid, they will believe a lie because they want to believe it's true, or because they are afraid it might be true. People’s heads are full of knowledge, facts, and beliefs, and most of it is false, yet they think it all true. People are stupid; they can only rarely tell the difference between a lie and the truth, and yet they are confident they can, and so are all the easier to fool.
Would anyone recommend a different video card for performance vs cost? By that I mean, I don't want to spend much more than that, but I don't even know if that is the best choice in it's class.

I am wondering if you really need Win 7 Ultimate. Check out these two articles and ask yourself if you really need those features (which are few and aimed toward businesses).

Other than that, looks good aside from the ram catch made earlier.
You may consider a Radeon 5870. Same performance more or less, save yourself $90. The 5870 also features low power draw when the card is not being worked (which is like 90% of use, anything not in-game) and lower power draw under load than the Nvidia cards.
You can see a comparison here. I'm looking for a 5870 vs 295 like you have in the list.
Edit: Here is a quick compare in Wolfenstein
Good point, I know very little about windows 7 so I ventured to guess that the more features include would be better. But I will look at those articles you posted and see, you may be right there.
