    Samsung F1 is freaking fast, as is Seagate 7200.12.

    My personal internal setup (not the network/external) is 32GB SSD/640 7200.12. Windoze and a few apps on the SSD, everything else on the 640. I can even play games I installed on the old windows install on the new one, because they're all saved on the 640. May be a thing peculiar to Win7.

    In that case, I'd say go with either a Spinpoint F1 or a WD Black (both 1TB). I don't have any direct experience with them, but they're supposed to be the best performing 1TB drives.

    Another option, if you have more money to blow on it, is the WD 2TB RE4 drive. You'll have to search a bit to find somewhere that stocks them though; I know NewEgg only had them for about a week. IIRC, they run about $320 each, but with a 32MB cache, 500GB platters and RE reliability and speed, it might be along the lines of what you're looking for.
