Does speed matter? Newegg has a SATA 6Gb/s Samsung 2TB 5400RPM drive for $70 today. Should I wait for 7200RPM or does the speed difference not matter that much for this usage?

I think it's more personal preference. I wouldn't think it would matter. If it's just storing files to use later then I would go with something cheap.
5400 RPM Will not only consume less energy, but it will also generate less noise and heat.
Pretty much it will be storing our pictures, music, videos and all my random files.
For fileserver work, you'll see zero real difference between a 5400 and a 7200 but as previously mentioned, the 5400 should run cooler, quieter and potentially more power efficient....
